Spaghetti nests with asparagus stalks cream

Finger-food you can make with leftover spaghetti. The best thing is to use plain spaghetti or simply seasoned with garlic and olive oil, but if you have used other ingredients on your spaghetti, just adapt the recipe accordingly. Makes 6 nests.


60 g spaghetti

4 asparagus stalks

2 tablespoons grated cheese

Salt and pepper

Olive oil, extra virgin



Make the asparagus stalk cream by cooking them in the pressure cooker for 10 minutes and then blending them until creamy.  Season with salt and pepper to taste. Take about 10 strings of spaghetti at a time, and twist them around your finger. Place the spaghetti nest onto an oiled baking tray. Use up all the spaghetti in this way. Put a tablespoon of asparagus cream onto each nest and top with a little grated cheese. Grill the nests in the oven for about 10 minutes. Remove from the oven and serve in individual bowls. If you wish, sprinkle some walnuts or pistachio nuts on top and add a dash of olive oil.
