Fruit recycling biscuits

I like to start the day with a juice made with a juice extractor. Perhaps with the arrival of spring I need a little ‘more vitamins, or simply because this time I’m really doing a million things … including the new book,  the new TV program I’m recording around Italy, the many collaborations in addition to my main job. Is a fact that I am always tired but at least I’m enjoying it a lot!

A glass of fresh and home made juice at day also means a glass of pulp waste to use every day. In addition to making sorbets, puddings and jams I tried a new recipe of biscuits that is very similar to “krumiri”.


200g of pulp waste of a  seasonal fruit juicer

The rind of a lemon / orange

150g spelt flour

200g brown sugar

80g soft butter

1 egg

a pinch of salt


Enjoy your fresh juice made with seasonal fresh fruit and put the scrap pulp into a bowl. If you do not use it immediately cover it and store in refrigerator or in the freezer if you use it later. Mix to the pulp all other ingredients and rind of a lemon or orange zest. Stir until creamy and smooth and soft. Place the mixture into a pastry bag with a star nozzle and give the form you prefer to your biscuits krumiri (“s”, “v”, etc..). Bake at 160 degrees for 25 minutes.

In my house, where real gourmand live these biscuits have been very successful.
